Johnnycakes












We read about johnnycakes (or sometimes called 'journey cakes') in a couple of different books. We decided to try them. They have been around since the 1600's. They were easy to make. I thought they tasted like cornbread (I ate 6 of them!)

Recipe for Johnnycakes:

Combine 1 1/2 cups yellow cornmeal, 1/2 tsp. salt, 1 cup boiling water, and 1/2 cup milk. Stir well. Melt 2 T. butter in skillet over medium heat. Pour 1 T. of batter into the skillet. Cook over medium heat 4-5 minutes on each side. Cook until edges are lacy and lightly browned. Turn gently with a spatula. Serve hot with molasses or honey and butter.

Homeschool Classes










Our group homeschool classes started. I am taking Mush-im-do, Sweet Chocolate, and my mom's Spanish class. I loved my classes. In my Sweet Chocolate class, we get to sample something chocolate every week. This is my kind of class!! We learned that the Aztecs would trade 50 cocoa beans for a llama. In my mush-im-do class, I learned how to kick!

Dad's Office


On Tuesday, we went to Dad's Open House for his new office. I helped Mom make all the treats that he served--we worked a long time on Monday. Yum! I got to cut the ribbon with great big scissors at the ribbon-cutting. It was cool.
